You can use any meat, cheese, veggies, or combo you like. Preheat oven to 425.
Layer low-carb tortillas on parchment sprayed with avocado oil, and sprinkle cheese in the center.
Sautee 1 lb of organic ground beef with a shallot and 1 diced tomato and taco seasonings until fully cooked.
Layer cooled meat mixture on cheese and add another layer of cheese on top of the meat
Fold in the tortillas and spray with avocado oil
Cover with parchment and another sheet pan
Bake for 15 minutes - remove sheet pan and bake for 10 minutes
Let cool and serve!
